Instructions

  1. Preheat oven to 350F.
  2. Grease or spray the 8x8 pan. A layer of foil or parchment paper can be used for easy removal.
  3. Melt the butter, and allow to cool.
  4. Whisk together flour, sugar, lemon zest, baking powder, and salt.
  5. Add eggs, melted butter, lemon juice, and vanilla. Stir well until the mixture is homogenous.
  6. Pour the mixture into the pan. Bake for 20-25 minutes.
  7. Alllow bars to cool completely before icing.
  8. To make the icing, sift powdered sugar into a bowl. Add lemon juice and lemon zest and stir until smooth. Pour over bars and let rest until the icing sets.
