Lemon Bars

- Cooking spray or grease

Ingredients
Batter
- 1 cup all-purpose flour
- 1 cup sugar
- 1 tablespoon lemon zest
- 1/4 teasppon baking powder
- 1/4 teaspoon salt
- 2 eggs
- 3/4 cup butter
- 3 tablespoons lemon juice
- 1 teaspoon vanilla
Icing
- 1 1/2 cup powdered sugar
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
Instructions
- Preheat oven to 350F.
- Grease or spray the 8x8 pan. A layer of foil or parchment paper can be used for easy removal.
- Melt the butter, and allow to cool.
- Whisk together flour, sugar, lemon zest, baking powder, and salt.
- Add eggs, melted butter, lemon juice, and vanilla. Stir well until the mixture is homogenous.
- Pour the mixture into the pan. Bake for 20-25 minutes.
- Alllow bars to cool completely before icing.
- To make the icing, sift powdered sugar into a bowl. Add lemon juice and lemon zest and stir until smooth. Pour over bars and let rest until the icing sets.
